Carlo first began working in some of the cities best restaurants eight years ago. His first apprenticeship was at one of Toronto’s best known restaurants, Centro. He then moved over to Susur as a waiter and soon after took on the responsibilities of sommelier. His next move was five years ago, when he was asked to interview for the position of Manager and Sommelier at Splendido. In that time, Carlo has built one of the most respected wine lists in the city and has helped fuel clients growing interest in food and wine pairing.
Carlo studied at George Brown College through the International Sommelier Guild. Since completing his certificate, he continues to study at home and attends industry tastings whenever time allows.
Carlo is enjoying the challenge of managing Splendido and being part of such a dynamic establishment. He’s extremely proud of the following that he and the team at Splendido have created in a few short years.
Outside of the restaurant, Carlo loves to eat good food, drink wine, rock climb, and listen to music. Most of all, he enjoys spending time with his son Keiron and his wife Sarah.
